I did read that the OP was using a regulator on the water. I fully admit that I have no experience with water pressure regulators, however I'm an industrial Gas Fitter and have a lot of experience with natural gas, propane, and fuel oil regulators... they can fail.
Whenever we've had a working system (fuel oil typically) that suddenly starts sprouting leaks at several valves or pressure relief devices, it is a sure sign the main pressure regulator has failed. When the system is operating (fuel oil flowing to the burners) everything is okay, but when it is shut down the pressure continues to build downstream of the regulator until all the weakest links begin to rupture. That sounds exactly like the OP's situation.
I would test the water pressure regulator with a little bit of piping and a good pressure gauge. Simply install the gauge into some pipe fittings on the downstream side of the regulator, allow water flow through the regulator to fill the pipe fittings, ensure there are no leaks or water flow, and just watch the pressure gauge over a period of 24 hours. If the regulator is faulty, the pressure will slowly increase until it reaches the same pressure as the supply (upstream side of the regulator)
