We've had both.
Rear bath layouts give a "one room cabin" kind of feel - beds and kitchen all in one room. Best for shorter trailers.
Center bath layouts separate the main bed from the living space. Nice in trailers long enough that you don't need the space occupied by the main bed to make the living area feel "roomy" enough.
