Just a thought on weighing your truck, don't know about your state, But I know Oregon, Washington, and Colorado all leave exterior displays on in state DOT weigh stations. These are normally closed on weekends and sometimes during week days. This is where I do all my weighing.

heavy options added to the 5er are the front AC and 170 watt solar.

I get that my truck will have slightly different weights, but using the numbers above give me a general idea of where things are.

When I weighed the rig, it was in full travel mode and fully fueled.

True but without do a full spec with trim level, the numbers will be all over the place. If everyone is extremely pedantic and doesn't respond unless they have the exact match...the OP will get no responses.

Reality is an F250 will be very similar to an F350 SRW...add a few hundred pounds if you want to see the impact of diesel

Either the CAT scale was off, or my bride managed to do something I didn't think was possible in this trailer, and blew right through GVWR.

I'll get my truck weighed in a couple of weeks, but wow! According to the calculator, pin wt is 3820, trailer axles 11,940.

Pin wt is a huge surprise. I'm running through my head what was added to the trailer in front of the axles, and for the life of me not getting it. I need to find the factory sticker, as I believe it's actual weight. Worst part of the whole thing, I can carry 258 gallons, but only had 30 gallons on board when it was weighed.

So you think the 5er weighs 15,760# with a 3,820# pin is 24%, that while in range is a bit heavy.
Have you taken into account what you have added to your TV before setting the 5er on the hitch?
Our 2016 Ram 3500 CTD DRW, scales 10,000# having used 1,411# of our 5,411# payload.

I'm not sure what numbers you are using for your GVW but the brochure /web/ literature numbers generally do not include options.
Any optional equipment immediately reduces the brochure numbers.
Deducting the dryweight from the GVW may leave one to believe they have 2500# available. But a large portion of the 2500# maybe eaten up by options before you even get started loading up the rig.
Brochure numbers can be very misleading. Using the factory sticker is a better way to determine CCC, cargo carrying capacity. However the sticker is not available until the rig is actually made. When shopping you need to compare brochure figures to sticker on similar model.
