Well I have to say this went much better than I expected. I finished up mounting the TV and both mounts I used are fantastic. Both very well made, high quality, sturdy and this little project turned out exactly the way I had hoped. Here are some photo's:

The outside mount was much easier than I anticipated. This was only because I was able to open the refrigerator vent and could actually get a visual on a stud. Nonetheless it was still very nerve wracking drilling holes into the side of the camper. I used the screws and anchors that came with the mount plate and after placing the anchors in the holes I squirted a bunch of silicone in the holes before setting the screws. They went in nice and strong with solid hold, I feel good that there won't be any issues. The bracket is just to the left of the fridge vent:
