For that load you could even get by with a 2008 or newer Ford E150 van, as long as it has 4.10 gears. The newer E150s have an 8600# GVWR which is the same as the 2500 Suburban or Express. A 1-ton van would give you lots of margin, but for what you describe an E150 would work just fine. This would open up the option of the Premium package which includes 2nd row captains and leather seats. Should be easier to find a conversion in this level too, but you have to still make sure the conversion didn't add too much weight (i.e. get it weighed before you buy!)
I bought my van from Enterprise Ride Share because it has all captains chairs, which is REALLY nice for long drives. Price was right too. They sell them around 100k but that's still pretty much new for these vans.

An Express van would work too, as long as it is a 2500. The 1500 series is not equivalent to an E150. Also, an Express without the tow package requires adding many more parts to make it ready for towing, and you can't get tow mirrors for it.
