Not sure what you mean "camping on a beach", but I would try to find a nice rv park NEAR a beach, so if the weather is crappy, you will have things to do at the rv park (pools, game room, activities) and the wife won't have to worry about the kids in the ocean and getting sand out of areas that normally sand is not to be. Maybe then she won't mind going.
