We have had several rotary Mazda's in the family years ago. Most were vintage mid-eighties. I have a lot of respect for the Mazda rotary engines. But high gas mileage was never their strong suit. But very reliable if taken care of. The other sensitive part of them is to make sure they are cooled properly. And never overheat. Basically they are two cycle motors. And not a lot of low end torque. So they need to rev.
Not sure how they would do towing 2500 pounds. Maybe OK if you have the right rear axle ratio. But not sure if 4.30 is low enough for towing over larger hills or stop and go. But 4.30 is probably the best you can get for that truck.
I would feel more comfortable towing less than 1000 pounds. Maybe a small pop-up. But if you are really up to taking on repairs, then go for it. I don't think the motor will fail, unless it overheats. And I doubt the trans will either. Now...the clutch? That might be the weak link in the chain.
I am not sure the thing will be a great towing vehicle. But I think it will work out OK. Plan on buyong a lot of gas, and shifting a lot.
Let us know how you make out.
