I have never seen the RV shows catering to the do-it-yourself customer other than cooking and cleaning products (been going regularly the last 10 years). The only venue I can think of that would provide what you are looking for would be some type of manufacturer/builder show. Here appliance companies would be trying to get a company to use its products over its competition's.
I think these are reasons you don't see this at shows:
1. Many RV'ers are older and either cannot physically do the work to replace appliances or worked hard all their lives and would rather pay someone to do it now.
2. Young people are pretty much priced out of new RV's unless they are fixer-ups and they will just search Internet for they want and have it shipped.
3. I'm in between these two groups and find work demands a lot of my time and I want to spend my free time traveling and camping instead of getting something back into camping condition.
4. There must be pressure from the dealers at the show to sell new verses fixing existing RV's.
