The "law" vs real world capacity always is a fun discussion! And since the "laws " are different state to state and likely province to province, it's worth a check to see if the real weight cops will approve of your setup of course.
That notwithstanding, a newer F350 srw IS enough truck to do what the OP wants to do, just need to modify the truck a bit to what is needed and what you're comfortable with.
Being a long bed, most of the 8-9' long campers have centers of gravity that "work" on short bed trucks. So they will put the CoG ahead of the rear axle on a LB truck. Maybe takes a few hundred lbs off the rear axle compared to CoG centered on the axle. If we're splitting 100lb hairs here.
Our 4000lb ish camper on a SB Dodge with the theoretical Co G just behind the rear axle centerline by a few inches actually puts a little weight on the front when loaded up with water food everything before a trip. Can see the front suspension compress slightly.
After a trip I suspect it's about balanced or slightly rearward of center of axle. Again not much either way unless you're splitting hairs.
