I guess I can see going SRW for off roading but I'd sure keep the long bed. You will have a much larger selection of campers for a long bed truck, particularly with that many people going.
Your main weight limitation will be the tires and rims as the axle will likely be the same as the dually version of the same truck. I would say if you add 19.5" rims and tires you could due fine with the SRW. It will probably not be a stable as a dually on the highway but it doesn't sound like that's your goal.
If you try to stay under the GVWR you're really going to find this unworkable. Most people hauling hard side truck campers, especially on a diesel 4wd SRW are going to be over the GVWR. That's just how the math works. As long as you aren't over your axle and tire ratings it should be fine.
