Over the years I have had 2 different TV/trailer combos that I towed close to the limits of the tow vehicle (and it's not out of the realm of possibility that I'll do it again). One combination I towed with was a mini-van towing a small 17' hybrid trailer (GVWR of 3500#).
Here's what I can tell you about it. It's doable, it's safe. As you said pack light, set up the trailer and w/d hitch properly. But whenever you push any tow vehicle to its limits, you have limitations on how and where you can tow. Forget mountains. Hills are OK but probably won't be fun. Forget long distances. Towing such a combo in strong winds simply sucks. If you do choose to tow a small hybrid or TT with your Sorento, you'll most likely be looking at a bigger TV in 12 to 18 months.
There is a marked difference between towing close to you limits and towing with a 20% or more capacity margin.
