That's interesting. We bought ours off the lot and it has an oven. We never use it, and don't want it. If it wasn't such hassle I'd remove it and put a cabinet there.
Regarding water tank size, we haven't boon docked in years. Even when we did more state parks getting water was easy. Use a folding luggage cart for the water jug (you can pick one these carts up for next to nothing at a rummage sale). And use an RV water pump to pump the water into the tank. Easy peasy.
