Bingo! It's torque management software that makes these high numbers possible. If all 850 ft./lb of torque were available in low gear right off idle something would break or the frame would twist. I imagine that's why the manual transmission Ram pickups have much lower hp and torque ratings. It's nothing new, in OTR trucks it's common for a higher hp rating to be available only when cruise control is engaged. If 500 hp/1000 torque is ever available, it's very possible that this power rating would only be available in the top 3 gears, at freeway speeds and for short periods of time.
