I am sure that if you want to fork out the dough, there are companies that will build a TT with onyx trim and fine Corinthian leather. I see them on the travel channel quite often.
However, most people only spend a few weeks a year in their TT and the vinyl veneer serves them quite well. I have not heard of a dealer yet who would not upgrade the tires, mattress or most any other readily available feature you are willing to pay for.
