I towed a 30' TT with a 1/2 ton (Toyota Tundra and Nissan Titan) for five years. I was right on the edge of payload capacity, but, under on max tow. I was constantly worried about weight of things going into the truck or trailer. If I got in a situation where I had to tow with full holding tanks, that was enough to put me over on payload and GVWR of the truck.
I only towed 4 - 5 times per year. Due to some unpleasant trips, I got to where I would schedule our traveling days by the weather reports. If it said there was going to be a cross wind, I could count on white knuckles, leg cramps, and neck / back aches. "Breezy" days, it was best to stay off the road. There were a couple days when the weather report said "breezy" and I didn't have the option of waiting for the next day, one of them I had a situation come up (a very strong gust of cross wind), where was lucky to keep the rig out of the ditch.
I didn't buy a bigger truck, until I bought a TC that was a little heavy for even a 3/4 ton. I felt like I had traded in a Corvette for a school bus.
First time towing with that, I was using the same hitch, pulling the same trailer, driving the same route, and couldn't believe the difference. No cramps, no back aches, no white knuckles, I didn't need to worry about every pound being loaded, and the weather report was only a problem, if it was about a storm.
Do I think 1/2 tons can the job ? --- As long as weather and traffic co-operate, Yes. It can be unpleasant towing that close to max ratings, but, if I haddn't bought the TC, I might still be pulling those few trips per year with a 1/2 ton and worrying about weight and weather.
Do I think 3/4 ton can do that job better? Yes
