I don't understand the appeal of a large trailer either. several co-workers and friends have asked me when I'm upgrading to a larger trailer, and then act confused when I tell 'em I'm happy with my 20 footer. I too have made the observation like yours, typically the larger the RV, the fewer people traveling with it.
The only reason I would upgrade would be to add an extra 2-3 feet to the bathroom, but I haven't seen a floor plan like that. even the huge trailers have tiny bathrooms. I'd like to have a 3x3 shower with 7ft of headroom (im almost 7 ft tall), without having to spend six figures on a luxury land yacht.
