I haven't had a pickup since 1998, but I've towed a couple hundred thousand miles since then with smaller SUVs (mainly an '08 Toyota Highlander). I say that to let you know I have nothing against using an SUV to tow.
The one thing that gives me pause is that hitch weight. First thing I'd do in your shoes is, go to the Airstream dealer and tell them you want to see a scale reading of the tongue with 2 LP tanks and battery in place. Then look at where the fresh water tank and water heater are located; water weighs 8.3 lbs per gallon and a front mounted tank will sink your ship (unless you run with an empty tank). Don't guess; make the dealer prove in advance that you won't have a nasty surprise after purchase.
If the actual hitch weight numbers at that point are ok for you, and you can see a way to keep the front from getting heavier when cargo is loaded, check with Can-Am and find out what they recommend (and a rough estimate of cost).
