Maybe it's where you are going and what you do there is what she objects to.
If you are just going to Brazos Bend and TT Columbus I would be a little disappointed too.
Does she like the beach? Try Sandpipers in Galveston, Quintana in Freeport or Gulf Waters in Aransas Pass. Fishing at Goose Island SP and lots to do in Rockport.
Shopping? Stay at Guadalupe SP and go to Sam Marcos, Wimberley, Boerne or San Antonio. She might like Huaco Springs on River Road in New Braunfels. San Antonio is a short drive from there as well. For whatever reason my wife is attracted to the River Center mall. Work that into the trip and she is good. A day at Tangers and every thing else clicks.
Point is, it may not be the camping but where you camp and how you spend your time. Make it where you get to do what you like and she gets to do what she likes wrapped up in one trip.
