Every year I use my trailer for hunting. We leave sometimes for a day or two and leave the heat off and fridge on. Temps range from high teens during the day and single digits at night. Never once had an issue. This is with a propane powered Dometic fridge that is original to a 1987 trailer.
I've had water bottles on the counter frozen, but contents of the fridge and freezer were fine.
As with a lot of trailer "issues" I think this is being over thought.
