Winter camping

Um..... this is new to me? How do you "winterize" a refrigerator. They are either turned "on" or turned "off". If the temperature inside the refrigerator gets warm, they run till it gets cold again. If they are turned off, they'll never run. What is there to "winterize" other than removing food?
Those high dollar fridge with ice and or in-door water, I suppose they could be damaged if not winterized?
