If you want to avoid steep grades then take 87 from Austin.
The water in Durango is probably cold year round but the weather will be warm so that will counter it. Durango is a great destination.
One other note being from the flat lands of Florida you will possibly experience some tiredness because of the altitude change. Drink plenty of water, can't reiterate that enough. If you feel lightheaded ibuprofen and water, this would be minor altitude sickness. You probably won't have any but energy levels may not be what they are at sea level for a day or two. It's not a big deal but just an FYI.
You might need more than one pair of long pants for Colorado and a light jacket, layers.
