Contact the provincial tourism board and request a copy of their Doers and Dreamers Guide. It is chock full of information., We have enjoyed using our bikes while in N.S. - Cape Breton Highlands is a beautiful area and should not be missed.
Some serious cyclists bike around the perimeter road but it is a ride for only very fit and energetic riders. Many RVers do not even take their trailers, etc. on the road.
NS roads are rough in many areas, especially the secondary highways but very doable at slow speeds.

The Doers and Dreamers Guide will give you different routes depending on your interests and has a whole lot of information while you're there. Nova Scotia is bigger than it seems and you might find it hard getting everything into one trip (depending on how long you're staying). You can easily spend all your time in the Cape Breton area, or in the Halifax area, the Bay of Fundy region, etc.
