It would be a shame to miss Santa Fe. Both Taos and Santa Fe are among our favorite places to visit. Even if you stay at Taos, a day trip to Santa Fe would be easy to do. If you do that, you should take the old "high road to Taos" (as it is called in Santa Fe).
We usually stay at Taos Valley RV park and in Santa Fe at Santa Fe Skies RV.
Our Amarillo stop is usually at Overnight RV Park.
We would stay in Garner because we have the Texas State Park annual pass, and prefer state parks. We will be staying at Goliad State Park tomorrow night on our way back from the Valley.
