Fundy National Park was in New Brunswick (not Nova Scotia) when we were there back in 2008. Definitely not a one hour drive from there to Halifax.
Fundy NP is good for experiencing the tides, but IMO the best place for that is at Hopewell Rocks. We stayed a night at the Ponderosa Pines Campground for our visit to Hopewell Rocks.
On the Nova Scotia side of the Bay of Fundy we stayed at Blomidon Provincial park. At low tide you can walk way out on the sandy ocean floor. Streets & Trips calculates 1-1/2 hours from there to Halifax.
