My guess is it's to avoid the credit card processing fees that businesses have to pay. Unless they don't deposit the cash in a bank account (and so pay employees and bills with the cash), it's doubtful it is a tax dodge, in my opinion. Chances are they aren't getting filthy rich after expenses in any case.
