We lived in Wylie and frequented Lake Lavon COE parks for years. We stop at East Fork whenever we visit the kids. I really can't recommend it as a destination.
Just off I-35E north of Lewisville is Hickory Creek (COE) on Lake Lewisville.
On the south side of Dallas is Cedar Hill SP.
Once you leave Dallas on I-30 - the next stop is Sulphur Springs SP, Bob Sandlin SP (outside Mount Pleasant).
Since you plan to be on I-30 from Dallas east - Lake O' the Pines is a bit off track but a great place with four very good COE parks - I prefer Johnson Creek.
Near Texarkana is Lake Wright Patman - with very nice COE parks at Rocky Point and Clear Springs.
You have to get to Lake O' the Pines or Wright Patman before the lakes in Texas have near normal water levels. Those around Dallas/ Fort Worth are all very low.
On I-30 in Arkansas - DeGray Lake has several great COE campgrounds and a pretty good state park.
A side trip up to Crater of Diamonds SP is a neat experience.
I personally prefer Lake Greeson a bit north of I-30. Almost grew up at Kirby Landing COE park on that lake in the 60s.
A great park a bit to the north, but not too far out of the way is near Broken Bow, OK - Beaver Bend SP just below the dam on Broken Bow Reservoir.
