That bathroom is HUGE. We have a wet-bath truck camper and, for me, it's easier to partially dis-robe before entering the bathroom. I know that doesn't alleviate your problem proof-reading and such, but even a semi-competent carpenter shouldn't have any problem putting an extension jamb in your door way. Possibly, using the existing holes for the hinges and striker to support the new structure, preventing/limiting the addition of holes to the existing jamb. I would pursue that before an accordion door. Although it's very seldom used, we have an accordion door in our S&B that irritates me, (but not enough irritation to move a new door to the top of my Honey-do list).
