Heard one should plan on ~1K lbs pp. We're looking for our full-time fiver now and are planning on at least 50% more.
That's exactly accurate for my family of 4. 3,800+ pounds of stuff for us.
1 guy = 200 lbs
3 women = the rest

For a 4-day boondocker, I've calc'd about 1,200 lbs, MAX, for the 2 of us, including a lot of shared food for the kids and, usually, about 50 lbs of shared ice. This also includes full propane, 2 6v batteries, all the dishes and pans, clothes and personal stuff, bedding, games and about 550 lbs of fresh water, tables, chairs and miscellaneous "stuff". With an advertised 4k CCC, we're nowhere near that. For trips to a full hookup campground, we take even less, since no water is needed and we bring minimal food with us; we buy as we go.
