Converting to 50 amp
How hard would it be to convert a 30 amp 5ver (or TT for that matter) to 50 amp? Has anyone ever done it?

Changing the existing 30A panel to 50A can be very involved.
An alternative is to add a new 50A panel and cord. A 30A CB feeds the existing panel which is now a subpanel. Rewire any current or new circuits to the new panel as desired.
