You know, you're not that far from me, I'm "Just outside" the city limits of Asheville NC, and do almost all my towing in the mountains of NC, SC, TN, VA and WV...and again, having towed the same 5er with both a SRW and DRW truck, IF you're going to be towing on some of these mountainous curvy roads we live and tow on, I believe you'll feel better about your towing experience with the dually, unless you are towing a not too long and not too heavy 5er...
If you're not towing heavy, go with the SRW truck...your call, your money...My dually is my daily driver and I love driving this truck..towing what I'm towing, where I tow.....only a dually for me now.
No one has stated that a 1 ton SRW ISN'T stable...if that were the case, neither is a 3/4 or 1/2 ton, and that's stupid to even suggest. what is being said is that a 1 ton dually may very well offer a "MORE stable" towing experience than the SRW, which does just fine unless it's overloaded....then, you're on your own.
