I met a fellow from Canada several weeks ago that had just bought a new trailer with on-demand hot water installed. He's sorry he got that "upgrade". He said it is virtually impossible to set the temp and it continually fluctuates.
By their nature, the water temp will vary with the flow rate. You'll get cooler water with the taps on full. Part of the price you pay for the economy of not storing and keeping hot a bunch of water. The result is that there is a slightly different technique needed in setting your shower flow up in order to get stable temp. And turning on the sink while someone is in the shower is guaranteed to freeze 'em out. The upside, besides economy of operation, is that there is no limit to the amount of hot water you get.
Some folks adapt to the differences easily and like 'em, some folks can't/won't change their ways and hate 'em.
