I wouldn't buy a boat just for that trip. It would be used for fishing locally most of the time. In the meantime, renting one there makes a ton of sense and is the plan.

If you feel the need for more living space inside your RV, what about a 5th wheel? And maybe tow the boat trailer behind it? I've seen it done. Backing up is tricky, though.
Doubles don't leave a lot of room for length in anything because of max length and I am not excited about towing doubles. If we found a way to make it happen, the boat would come out when we get there and not go back in until we leave. Once we got there, unloaded it, unhooked the trailer, it would be on the truck.
Just exploring at this point.
