In researching these I'm finding basic plastic ones for $20/side up to elaborate metal clamping ones for $50+/side. Do the cheapies work just as well? I'm not opposed to spending the $$ if I need to...

What ever holds your trailer where you want it. I used firewood for years. As the years go by and the older I get, the more I want my trailer to stay steady. I dont like all the bouncing and rocking so this is why I bought the fancy expensive store bought ones.
When you get a 130lb dog trotting back and forth playing ball with the kids you want all the stability you can get.
