95 between Hawthorn NV and Beatty NV has lots of ghost towns and trails. Central NV can get cold and snowy but generally there are many decent days during the winter if you are up to watching the weather and able to pack up and go during the good days. Snow usually burns off in a few day in the lower elevations in those areas. The Mina area is especially good for trail riding but the only RV park there closes for the winter so you'll be dry camping. The park owners live onsite so could probably at least tell you how conditions are if you called them.
