Another potato recipe, Girl Scout potatoes

The "potato in the campfire" thread made me think of a dish that my wife makes now, that she learned as a Girl Scout.

A large piece of foil on the counter, pile up sliced potatoes of your choice, and add to that: sliced jalapeno peppers, raw bacon pieces, sliced/chopped/segmented onion (whichever way you'd like best), and a pat or 3 of real butter. Sprinkle with salt and pepper. You can also use your favorite spice(s) if you'd like.

Wrap all this up tightly in the foil, and place in the edge of the coals, or on the edge of the grill until they're done. How long you ask? Pends on the size of the package, and I'm sure everybody here can figure as good as I do, or better!!

Serve with a meal, or yum yum alone, get after it!!

    Toss in some chucked pieces of bell pepper for those that can't take the jalapenos

    We just planted our jalapeno plants last week......love them



    We make an 'all in one' meal with those foil packets........add a hamburger patty and couple dashes of 'Whats this here sauce'.
    30 mins in the coals.......DINNER
