We do a lotta cooking for the extended family and weekend before last decided on Buffalo wing for ten. At the local HEB drummets were 380 a lb, doubl joints were 300 a lb and wing tips 200. Needing to be generous and cheap I settled on two big packages of legs ar a 125 a pound with a lot of meet. I figured if I scored the legs and cooked them hot in the oven they would be crispy like wing oughta be. A recipe for the coating was to wash the wings in half butter and half hot sauce. Because of the volume I had two metal lined roasting pans and one large pyrex dish cooking away at 400 degees.ch is not uncommon
Well the hot oven started smoking which is not uncommen. The kids start coming to dinner when the smoke alarm goes off. Turning on the ceiling fan and opening the doors usually takes care of the noise but not this time. Must be the butter. Opening the door the pyrex dish is a bit hot and smoking.. Son reaches in with a beer and pours some on the pyrex to cool it off. It shatters and grease runs down to the burner, second alarm goes off upstairs. I close the door and turn oven off so the flames go out but smoke is worse. Opening the door I lay in a considerable amount of water to cool the grease fires and stop the event. Wife raises hell about not using baking soda. Remote monitored fire alarm goes off and I get a call from Utah asking if I need Help. I relay that fire is out, oven is cool, house is open with a 35 mph north wind blowing the smoke out and I thank them for the call.
Moral of the story is to get wings from Hooters and avoid the ruckus. I did buy a new pyrex dish to replace the shattered one.
