I know that this is heresy, but I use my Mini George Forman grill to cook bacon.
If I don't have shore power, I'll run the generator for a few minutes for my wife to make her latte with the Nespresso machine.
The GF grill cooks the bacon evenly, keeps it flat, and drains off the grease. It's an easy clean up with a damp paper towel.
