I made this last night and it was so good I had to share.

Olive oil
1 ½ lb ground beef
Salt and pepper to taste
1 medium onion, diced
1 yellow bell pepper, diced
2 cloves garlic, minced
2 Tbs chili powder
1 Tbs ground cumin
1 can ea kidney beans and black beans, drained
28 oz crushed tomatoes

2 boxes corn bread mix
2/3 cup whole milk
2 eggs

For garnishment: Diced tomato, red onion, slices of jalapeno pepper, cilantro leaves, shredded cheddar cheese, and sour cream

In an iron frying pan, put two tsps olive oil and then the ground beef. Brown the beef adding salt and pepper to taste. Now begin adding the diced onion, bell pepper, garlic, chili powder, cumin, the two cans beans, and finally, the crushed tomatoes blending each ingredient into the meat, as you go.

Pour the two boxes of corn bread in a bowl and then add the milk and the eggs. Mix well. Spread out the contents in the frying pan, evenly, and then pour the corn meal batter over the contents making a nice flat surface. Put the frying pan in the oven and bake @ 400 deg for 25-30 minutes. Remove and spread sour cream over the top, followed by the shredded cheese, diced tomatoes, diced red onion, sliced jalapenos, and cilantro leaves.
