The best roast recipe came from a catering company:
Beef roast (any cut)
a pot of brewed coffee poured over the roast in a crockpot and cook on low for 5-6 hours. So flavorful. Does not taste like coffee.

The instructions for my 3.5 quart crockpot has a recipe for a pot roast (3-4#) with only dry seasonings. No browning in skillet, no water for 10-12 hours on low.

I marinate the roast first, and use a crockpot liner. Great for sandwiches.

2-3 lbs chuck roast brown on all sides
Remove from skillet, season with garlic and onion powders
Place in crock with:
Mix together...
1 c ketchup
1/2-1 c brown sugar (to taste really...)
1 12 oz can/bottle beer
Salt pepper to taste

Chopped onion, carrot, potato

6-8 hours

Although I hold off adding veggies for a few hours.

Serve with egg noodles or rice or crusty bread.

Try adding something called Kitchen Bouquet to your roast recipe some time...don't know what it is, but from Granny on down my family has always used it. It's like magic to the flavor...you can find it in a little bottle in your grocery store by the spices.

I typically like to use veggies to season my roast. I don't brown. I rub the roast with Kitchen Bouquet, chop onions, mushroom, garlic, celery, carrots and potatos, add salt pepper and water. That's it...it's always great! I pack it full with as much veggies as I can get...my favorite meal...damn now I'm hungry ๐Ÿ™‚

actually mom's way was a blade cut chuck roast in a large (rectangular) electric skillet. She set it on low, barely above warm, all day.

my mother's recipe is a can of cream of mushroom soup,undiluted, and a packet of onion soup mix. I can't take all the sodium so I make my own salt free onion soup mix.
I've tried the one above with the 3 packets and didn't like it. The Mississippi thing looked not so great to me.
I like adding a splash of wine to mom's, and a bay leaf. She always puts chunks of potatoes in hers, and some carrots and onions.
I don't like a real brothy pot roast, prefer the thicker cream of mushroom. Makes a great gravy. The brothy method makes the meat taste boiled to me.

My pot roast is pretty simple.
I brown the roast in the slow cooker first, add 1 whole chopped onion, 2 or 3 Bay Leaves, salt & pepper, 1 cup of beef broth. Cook low for 6 to eight hours. At the end I add brown gravy mix to thicken the liquid.

I just put the roast in the Crock pot and add a can of dice tomatoes usually the ones that have garlic and onions. If you use the plain just add any spices you like.
