Gettin' Eggy With It

im partial to straight up bacon and eggs (sunnyside up is my flavor of the week) with a side of toast (to dip in the yolks) homefries or hashbrowns (not those nasty puck things real shredded hash browns) and pancakes with Canadian maple syrup.

bonus points for additional breakfast meats or frying the eggs in the bacon grease

Custard, flan, bread pudding, quiche...

Me too.

Made a Hashbrown Casserole for tonight and lunch tomorrow.

Preheat oven to 375.

8 eggs
1 cup of heavy cream
32 oz bag of frozen diced hashbrowns (I used Ore-Ida)
2 cups chopped onion
1 cup of jalapeño and tomatillo salsa
3 cups shredded Mexican cheese blend
Garlic Salt

Pan fry the hashbrowns and onions. While browning, whip the eggs and cream together.

Put the hashbrowns and onions in a deep 9x13 lasagne pan and sprinkle with garlic salt to taste.

Pour the eggs and cream over top.

Next layer on the cheese.

Last layer will be the salsa. Bake for 45 minutes. :C

That's the beauty of eggs; you can do so much with them. Eggs on horseback and Scotch eggs to add to the list.

All of the above plus pickled eggs. Mom sold eggs so we had an abundance. I make homemade buns and egg salad and the grandchildren are in heaven.

WLToo makes a mean frittata. Basically, he cleans out the refrigerator, adds onions and potatoes, cooks it all until done, then adds as many eggs as he thinks is necessary, all whisked together. Lets it cook on the stovetop until the eggs are mostly set, then puts cheese on top and finishes it in the oven on broil (low). When the cheese is bubbly and slightly brown, it's done.

Never the same, always delicious.

but I luv Devil Eggs... could eat those till I get sick...
