Guam BBQ Short Ribs

Guam BBQ is typically made with Korean kalbi style short ribs, over a charcoal grill. Each family keeps its own BBQ recipe a tightly guarded secret. Thankfully, Rueben Olivas has let us in on the basics. I was stationed there 1974-76

Ingredients:
1 cup of Kikkoman Soy Sauce
1 cup of Apple Cider Vinegar
1/2 to 1 onion sliced very thin
6 cloves of garlic minced
Black pepper to taste
Beef short ribs depending on the number of persons 1/2 lb per person generally.

Directions:
1. Mix the ingredients either by hand or in a blender.
2. Pour the marinade over your ribs in a container and coat ribs well.
3. Place the covered container in the refrigerator or cooler for at least 2 hours or over night.
4. BBQ or grill as some say, mopping the marinade on the ribs to keep them moist.
5. Because these ribs are thin, they will not take long to cook. These are juicy and delicious right off the grill.
  • We refueled in Guam in 1973......not allowed to leave fueling depot due to short stop over.
    Beer trucks parked outside fenced area -----4 ships crews all confined in one small area and BEER

    Wasn't long before fists were flying.
    Our ship was told to LEAVE!!

  • I agree just want to share a recipe I got back hen I was stationed on Guam I have others but I can’t find where to buy carabo or water buffalo here in Sc hahahaha but the wild pig recipe I still use here
  • Regarding the thinness, I also think it is easy to over power the beef flavor with a long marinade. 2 hours is plenty. I would add some brown sugar and some sriracha sauce for kick.
