Jerky Recipes

Nothing better than some Jerky for camping snacks. At least that's what me and my kids think.


Beef Teriyaki Jerky

INGREDIENTS
2+ lb. eye of round roast

Marinade
1 clove garlic, grated
1-inch knob of fresh ginger, grated
1 tbsp. oil
1 tsp. sesame oil
3/4 cup of soy sauce
1 cup sake (Japanese rice wine) - I used white wine I have on hand
1/2 cup honey
1/2 cup brown sugar
2 tbsp. rice vinegar
1 tbsp. red chili flakes (or to taste)

  • Heat marinade till sugar melted
  • Cut meat against grain
  • Combine meat and marinade and marinate over night
  • Use dehydrator til dry, usually 10 hours or so.


My new Jerky gun for use with ground meats. I found it unused at a thrift store for $1.45. My first two recipes below, currently in dehydrator.



Pepperoni Sticks


2 lbs Ground Beef - 93 percent
4 tsp Crushed Red Pepper
3 tsp Fennel Seed
1 1/2 tsp Table Salt
1/2 tsp Curing Salt
1 1/2 tsp Paprika
1/2 tsp Sugar
1 1/2 tsp Ground Mustard
2 tsp Ground Black Pepper
1 1/2 tsp Garlic Powder
2 tsp Liquid Smoke

  • I mixed spices in blender
  • Combine spices and meat well, I used my hands
  • I let meat and spice sit overnight to blend the flavors
  • Use Jerky gun to make shapes
  • Put in dehydrator till dry, usually 10 hours or so.


Tasting Note: After tasting the first batch of Pepperoni, this recipe is missing something, not sure what yet, maybe some salt, but they were good in my bloody Mary mix. ;) Also I am going to try the larger stick the small one dried smaller than my taste.

Ground Teriyaki Jerky

1 lb Ground beef or Turkey
3/4 cup of Teriyaki marinade from above

  • Combine meat and marinade and marinate over night
  • Use dehydrator till dry, usually 10 hours or so.


Photo above is ground beef, but I did a ground turkey last night, and both are pretty good.

  • Instead of the plastic jerky gun (I didn't like how flimsy it seemed), I picked up this heavier duty aluminum jerky gun.

    It's much sturdier for my purposes and makes it possible to create larger batches of jerky without refilling. I keep my jerky recipes simple so I can taste the meat. Salt and pepper with a small amount of garlic or a dash of Worcestershire. No sugar.

  • That's the same jerky maker my daughter got me. Works real fine. And the jerky looks yummy!
  • My grandfather started making jerky about 1909 in west Texas. He said the key for them was to use plenty of coarsely ground black pepper was key before hanging the strips over the barbed wire fence. That way, you didn't have to think about what the black specks were...

  • Yes, I had to post the above post in three parts as problems with the embedded code and format.

    I did the ground beef teriyaki recipe cutting/shaping by hand last week and it was pretty good. The gun makes it a little easier for consistency in shape and thinness. I am still learning to use it.

  • Your jerky recipes for the gun didn't show up..could you please re - post them? I have a gun and haven't been pleased with the ones I have tried. Thanks
