killer pork chops

Easy to prep , get the thickest chops you can buy - wet them with EVOO , bread using smashed up potato chips ( Lays kettle cooked sea salt & cracked pepper )
BBQ indirect heat method till preferred internal temperature. The chips keep the chops moist with a nice crunchy crust !

Two years ago, we fueled and ate at a Petro in West Memphis, I think.
They had smoked pork chops an inch or better thick. They were absolutely the best I've had. I doubt they serve them often. The ones we buy at the commissary or elsewhere are thinner, by far, and no where as good. We stopped at another Petro, in Arizona thinking maybe they night have them. Nope and nothing else was as good.

I brown them and top with raw sliced onions. In bowl, mix can of cream of chicken soup with a splash of ketchup and a couple tablespoons of worcestershire sauce. Pour over chops, cover and bake until done. This makes wonderful gravy. Need to double up on the sauce mixture if more than 2 or 3 chops. Our all time favorite way to fix them.

Were do we get together for lunch? I made mine on the fly the first time. I never looked at a cookbook. I just wanted something that looked like Wiener Schnitzel cooked outside.

I do the same thing using bread crumbs. For extra flavor add some hickory or apple chips to the fire and put the lid on. Good stuff.

It means no heat directly under the meat. With charcoal or gas, I'd try to have my heat on both sides of the meat. On a 3 burner gas, middle burner is off.
