Low calorie and high fiber one pot recipes?

Does anyone have any great low calorie high fiber recipes?

Special diet restriction, 2000 calories and 30g fiber daily.

normally, beans, avocado, certain veggies (carrots, green beans, brussel sprouts, broccoli) and berries (raspberrry and blackberry) are the go-tos. Just looking for something new.

Generally allocate ~500 calories for breakfast & lunch and 1000 for dinner. Hoping someone has some good one pot recipes to add to my collection.

Breakfast casseroles? One pot recipes (dutch oven, crock pot)?
I've searched the ole interwebs and found a few, but not tried any. Do any of you have tested/trusted recipes?

  • A fully ripe avocado has a sweet taste. It reminds of a mixture of butter and mashed greens, with some varieties of nutty flavor. The flesh of the ripe fruit is oily, almost creamy by consistency. How to tell if an avocado is ripe? Ripe avocados can also be determined by the sound. When shaking you will clearly hear the knock of the stone. It indicates that the fruit is ripe and will be especially tasty.

    That turkey tamale looks good, I'd skip the olives and try black beans instead.
  • This thread has led to the crock pot now being busy cooking "Outside-In Turkey Tamale Pie." My family's favorite (so far) of the Hungry Girl recipes I've tried. This recipe is very tolerant of changes such as more beans or onion powder instead of fresh onions. My next tweak might be using canned chicken instead of fresh raw ground turkey; this change would make the recipe more travel-friendly.
