Low calorie and high fiber one pot recipes?

This thread has led to the crock pot now being busy cooking "Outside-In Turkey Tamale Pie." My family's favorite (so far) of the Hungry Girl recipes I've tried. This recipe is very tolerant of changes such as more beans or onion powder instead of fresh onions. My next tweak might be using canned chicken instead of fresh raw ground turkey; this change would make the recipe more travel-friendly.
