Moinks (Moo + Oink)
1.5 pounds ground beef
1 pound spicy sausage
½ cup chopped onion
4 ounces shredded cheese
1/3 cup BBQ sauce
2 eggs
2 cloves minced garlic
1/3 cup bread crumbs
1 tablespoon Worcestershire sauce
2 tablespoons fresh cilantro
1 teaspoon kosher salt
½ teaspoon black pepper
1 pound of bacon
BBQ rub
Mix all ingredients except the BBQ rub and bacon until you have the consistency of meatloaf. Make into 1 1/4" or golf ball size meatballs. Wrap with a 1/2 piece of bacon and pin with a toothpick. Sprinkle outside of bacon with the BBQ rub. Smoke for approx. 1 hour at 250 degrees until bacon is crisp. Remove meatballs from the smoker and coat heavily with your favorite BBQ sauce and return to grill or smoker to glaze. End result will be a sticky meatball.
