One Pot Chicken Dish
Just found this courtesy of another forum I visit and though I'd pass it on:
Laura Vitale's One Pot Roast Chicken + potatoes
I can imagine dill replacing rosemary and leftovers being added to a chicken broth for a filling soup.
Want more veggies? How about adding chopped kale and/or baby carrots a half hour before finish time or fresh baby spinach leaves at the end.
Have no oven? Just keep cooking on a grill/stove, covered, and be sure to add about 1/2" to 1" of cooking liquid.
Or gerrymand an oven using a chimney starter and aluminum pan with coals atop.
