Preparing smoked foods for the road trip

For a road trip, we prepare a variety of smoked foods and vacuum seal them for easy single serve portions. Our favorites are salmon candy, beef jerky, and smoked cheese. Only the smoked cheese needs to be aged in the package for a couple of months to mellow the flavor, so we plan ahead. In fact, we have smoked cheese in the fridge that is a year old and is still perfect.

  • Sounds like you have a busy summer planned! I use a Big Chief for jerky, and it is good enough for a few bags, but it looks like you have lots of seafood to process!
  • I'm just starting to smoke my harvest, and need to upgrade my inherited Little Chief Smoker.

    I have 3,500 oysters, 12,000 clams, and 15,000 mussels that I have raised over the last 3 years on my beach. We also have an abundant Dungeness Crab that we catch from our bay.

    We had planned to head to E WA over Highway 20 this weekend, but the fire issues have changed our plans.

    We've donated our MH for transportation on wine tours to Prosser and Walla Walla that were auctioned for fund-raisers. Walla Walla is a special place. Have fun.
