I recently got a smoker and really enjoy it. I've read a few posts about smoked potato salad. Does anyone have a recipe for this?

Thanks
Craig

Sarah's Loaded Tater Salad:
5 lbs potatoes {cubed and cooked any way you want}
1 cup mayo
1 cup sour cream
1 pack dry ranch
2 cups shredded cheddar
6 slices crumbled bacon
Green onions to taste
small can sliced black olives, optional

Mix dip, mayo, and sour cream let set at least an hr.
Add dip mix to hot potatoes, add cheese, bacon, onions, and olives. Salt and pepper to taste.
Add more mayo &/or sour cream to get a creamy texture.
Enjoy.

I've made and shared this recipe so many times! It would be great camping. You could fire roast your potatoes and cube them after or you could just boil them. I use red potatoes and leave the skin on. You can also 1/2 this recipe. You can also use a packet of real bacon bits instead of cooking bacon. I always take pre shredded sharp cheddar camping. It feeds a crowd and there's rarely any left. Hope y'all enjoy it.

I just use a mixture of sour cream and Hidden Valley Ranch dressing to taste to make a ranch potato salad. Or -- a mixture of mayonaise and dressing to taste. I prefer the sour cream as the ranch flavor comes thru better. (not the dry packets, the bottles of dressing).

Craig,
The Hidden Valley website had a recipe section. I found 2 potato salad recipes if no one has personal recommendations.

I would suggest what Dave did. I wouldn't put anymore heat on them then what is necessary to create the smoke and leave the vents wide open. I would think 30 minutes would be plenty because I don't think you would want more than a hint of smoke. You wouldn't want to over power the other ingredients.

That you Super Dave. My wife has a great potato salad recipe, and we were talking the other day about how it might taste if smoked. Will let you know.

I consulted the SMF, smoked meat forum and the concensus was to smoke the potatoes until soft and then dress with your favorite potato salad mixture.

Sticking a few potatoes in your smoker and giving them some light smoke would not require a recipe. It would make some great potato salad.

I've not made potato salad, but I have smoked potatoes. Seems it would bee a small jump to using those in your favorite potato salad recipe. I'll be watching this thread to see if anyone comes up with something more specific. Thanks for posting; interesting idea.
