Spam salad recipe

While camping, I make things that I would never make at home, and if the grocery store is far away then I am not above opening a can. Also, everything tastes better when you are camping.

Spam salad: makes about 8 servings
4 boiled eggs, chopped
1 can Spam, chopped
1/2 cup pickle relish
4 Tablespoons mayonnaise

Mix well and serve as a side dish. For sandwich spread, add more mayonnaise so that it holds together better. Pickle relish can be sweet or dill, as you prefer. Spam can be low sodium or low fat, if preferred.

Note: if you are using an egg slicer, divide the Spam into egg-sized chunks and slice the chunks the same way you slice an egg. Finish the job with a knife.

Needs some cubed cheddar cheese for me. I like side dishes that can eat like a meal on their own.

Try using all the same stuff , add cooked macaroni and make a pasta salad.

Try using hot and spicy spam instead of original flavor. I too crisp it up first and add mashed potatoes.

We make something similar. Ours also has chopped onions and we sear the Spam first. Most recipes that use ham can be made with Spam for a similar taste.
